Sumatra Mandheling Terroir Guide
Altitude: 1,300m – 1,600m | Region: Lake Toba Region, North Sumatra, Indonesia
1. The Science of Giling Basah (Wet-Hulling)
Unlike washed coffees processed with high water moisture control, Sumatran Mandheling undergoes a unique traditional process known locally as Giling Basah. Parchment is removed while bean moisture remains high (~30-35%), imparting deep bluish bean color and signature low-acid earthy complexity.
2. Flavor Profile & Texture
For lovers of heavy body, dark chocolate, and spice-laden mouthfeel:
- Primary Descriptors: 85% Dark Cocoa, Earthy Cedarwood, Cinnamon, Sweet Tobacco, and Syrupy Viscosity.
- Acidity Profile: Low, muted acetic acid making it gentle on sensitive stomachs.
3. Brewing Parameter Guide
Maximize full-bodied warmth in immersion brewing:
- French Press: 30g coarse coffee to 450g water at 92°C, 4-minute steep.
- Moka Pot / Espresso: Pulls exceptionally rich crema with warm spicy undertones.
